As spring emerges, squeeze in every bite of winter citrus possible.

Recommended cake: Vanilla with a hint of Lemon
INGREDIENTS

1 cup of Sugar

Zest of 1 Lemon (or orange)

While the cake is baking, combine one cup of sugar with the zest of one lemon (or orange). Pinch the zest into the sugar for 3-5 minutes allowing the sugar to absorb the flavor oils of the lemon peel. Spread out onto a cookie sheet.

Once the cake has cooled for ten minutes, remove from the pan and brush all sides with great quality extra virgin olive oil. Immediately press oiled cake into the lemon sugar using medium pressure for the sugar to really adhere. Keep rotating to sugar-coat all sides generously.

Sprinkle any remaining sugar on top of the cake then allow to cool completely before serving.
