Baking pans. Just like shoes, you should invest in the best. A bad pan can make you think you are a bad baker, but perhaps you merely have the wrong tools. An 8" x 3" round size is the what our instructions call for to make the perfect cake. We recommend aluminum or stainless steel, but NEVER non-stick.
A few notes if baking with a non-stick pan until you upgrade...
Lining with unbleached parchment paper is a must - no one wants repulsive chemicals in their cake.
But there is also rise factor. A cake is not reaching its full height potential without something to grip onto (the non-stick coating is too smooth for the batter to rise to its greatest heights, which makes for the dreamy texture.
Please never crinkle the paper which makes for a juvenile looking cake. Take the time cutting the paper to line the bottom and sides properly for an elegant, dinner party-worthy cake.
